Product Description

This gin arose out of a discussion and from a passion for Australian Native botanicals. Dunkerry  Flora are growers of cut flowers (both native and conventional) located at Thallon, (Nindigully) near St George in SE Queensland by husband and wife team Nico and Allie Hill. They are approximately 5hours, by car, from our distillery.

Desert Limes (Citrus glauca) grow wild on their property but they also cultivate a number of varieties of Geraldton Wax (Chamelaucium uncinatum). The Hill family manufacture a stunning Desert Lime cordial from the fruits of this intensive limey, small, prickly shrub, which flowers and fruits haphazardly. They grow a number of cultivars of Geraldton Wax, originally found in Geraldton WA which, during the season, flowers profusely for the cut flower industry. The waxy flowers, which can be pink or white, have very little bouquet. By far the majority of cultivars have a strong citrusy, myrtle, lemon myrtle flavours and one variety has a strong, full Bulgarian Rose bouquet and flavour.  We use this ‘rose’ variety!!! As with many flavours, people’s personal palates are incredibly variable: for some there is no rose, for others a ‘musk’ flavour but for others (the distiller included) it is though you have drunk a tea made from a bunch of David Austin ‘Mr Lincoln’ roses, or perhaps eaten a box of Turkish Delight…. bliss!!

Of course, for a gin to be a gin, it must include Juniper.  In this contemporary Australian Gin this flavour is subtle. The only other botanical is potato, from which we have made the spirit base and imparts a delicate ‘earthy’ flavour.

Enjoy this gin as a classic G&T.  We are sure that there are many other ways and mixes that can be used with Lime and Roses, but the distiller happily admits total fixation with the G&T
